Fresh Cheese At the beginning of the making process, all cheeses are considered fresh cheeses, as they are neither fermented nor ripened. We often refer to this as the "infant" stage, because they haven’t aged yet. Freezing Fresh cheeses do not freeze well. Given their very high moisture level, freezing alters their texture, but their taste remains the same. It is preferable to use previously frozen fresh cheeses in cooked dishes. Freezing will not affect dishes cooked with fresh cheese.
