Julie Van Rosendaal
 Julie Van Rosendaal is living proof that you can have your cake and eat it too. (After all, what good is cake if you can't eat it?) She has been referred to as "queen of the skinny sweet", the "poster girl for low fat cooking", and is in demand to teach classes, speak to various groups and demonstrate her culinary expertise at events and benefits across North America. She is also a regular contributor to newspapers and magazines, and frequently appears on TV and radio, namely as the food and nutrition columnist on CBC Radio's the Calgary Eyeopener each Tuesday morning.

An avid cook since age 3, Julie began developing low fat recipes for her father, a doctor with high cholesterol and an insatiable sweet tooth. The demand for her healthy cookies inspired Julie to open a successful low fat bakery in Calgary. Over the course of years spent researching and experimenting in the kitchen, she developed the knowledge she needed to create healthier versions of typically high fat, high calorie dishes and baked goods that were so delicious, it enabled her to enjoy whatever she craved rather than declare her favorite foods off-limits.
By making the decision to quit dieting and start living on her own terms, Julie's new healthier lifestyle led to a major weight loss - 165 pounds - as well as a best selling cookbook! In 2002, Julie closed her bakery and self published One Smart Cookie - all your favorite cookies, squares, brownies and biscotti... with less fat!, which has since become a best seller several times over in Canada. Her other books include Grazing: Portable Snacks and Finger Foods for Anytime, Anywhere published in 2004 and her newest title, Starting Out, which was released in 2006 to a great response.
Julie's inspiring weight loss success story has piqued the interest of the media both locally and internationally. She has been featured in such publications as Shape, Prevention and Woman's World magazines, and has even received interest from the producers of Oprah. Julie lives in Calgary with her husband Mike and son Willem.
